As a matter of fact Giuseppe Ricciardello's company "IL CASALE DELL'ULIVO", following the guidelines of bio-production, commercializes an olive oil extracted from olives organically farmed, and certified accordingly to the regulation CEE 2092/91 about the production of a biological product. It ensures not only the quality of the original product (the olives) but, through the company's oil mill, the grinding and the scutching of the olives with a dry process, that differently from the traditional techniques of grinding, it does not require hot water in the process. The only water provided during the grinding is the one produced by the transformed olives. The rules of bio-production, as described in the regulation CEE 2092/91, in the case of a perennial culture like olive growing, must be applied at least three years before the first harvest of the organic products. |
