As a matter of fact Giuseppe Ricciardello's company "IL CASALE DELL'ULIVO", following the guidelines of bio-production, commercializes an olive oil extracted from olives organically farmed, and certified accordingly to the regulation CEE 2092/91 about the production of a biological product. It ensures not only the quality of the original product (the olives) but, through the company's oil mill, the grinding and the scutching of the olives with a dry process, that differently from the traditional techniques of grinding, it does not require hot water in the process.

The only water provided during the grinding is the one produced by the transformed olives. The rules of bio-production, as described in the regulation CEE 2092/91, in the case of a perennial culture like olive growing, must be applied at least three years before the first harvest of the organic products.
Giuseppe Ricciardello's farm "IL CASALE DELL'ULIVO", after having chosen to change by the time limit and the requested guidelines cited by the CEE regulation, and after having passed the different critical checkpoints like: an administrative investigation, an annual and/or a sudden unannounced inspections at the production's site, the collection of sample for test to be sent to a certified lab of the Certification Authority. After have been through all the checkpoints, the company has gotten the license that certifies the methods of organic farming from the Certification Authority.
The ECOCERT ITALIA, certified that the farm " IL CASALE DELL' ULIVO" of Giuseppe Ricciardello located in the district Rocca San Pietro of the town of Naso (ME) Italy, produces organic extra virgin olive oil.
