Appetizer:

Tomato bruschetta:

Cut and slice homemade bread and toast it, until it becomes crunchy, rub on it a clove of garlic. On the side chop finely the tomatoes, and dress them up with ORGANIC extra virgin olive oil " IL CASALE DELL' ULIVO" add a touch of salt, parsley, and place them on your toasted bread. Your bruschetta is ready.

Flavored warm bread:

For this recipe is needed the home-made bread right out of the oven, cut it lengthwise, dress it up with salted anchovies, oregano, salt and ORGANIC extra virgin olive oil " IL CASALE DELL'ULIVO".

Main course:

Fresh tomatoes pasta:

Ingredients: Linguini or Spaghetti, cherries tomatoes, ORGANIC extra virgin olive oil " IL CASALE DELL' ULIVO", garlic, salt and pepper.

Put the water to boil, while you wash the tomatoes. When the water begins to boil, dip the tomatoes for a few seconds, pull them out and peel them. Put the salt in the water, resume the boiling and dump in the pasta. Slice up the tomatoes, put them in a pan with the garlic, a spoon of ORGANIC extra virgin olive oil " IL CASALE DELL'ULIVO", and a pinch of chopped parsley. Put the pan on the stove to warm up, but don't let it cook. When the pasta is al dente drain it, and dump it in the pan with the tomatoes. Raise the flame and let the juice soak. Dress it up with some more ORGANIC extra virgin olive oil " IL CASALE DELL'ULIVO", a touch of fresh pepper, and it's ready to be served.

Garlic and olive oil pasta :

Ingredients: Linguini or Spaghetti, ORGANIC extra virgin olive oil " IL CASALE DELL' ULIVO", garlic, paprika, parsley and salt.

Put the water to boil, meanwhile in a pan fry, the garlic, a spoon of ORGANIC extra virgin olive oil " IL CASALE DELL'ULIVO" and the paprika, until the garlic is browned then let it cool. When the water boils dump in pasta, and let it cook until is al dente, then drain it and add the sauce with some chopped parsley.

Second course:

Fish in a salmoriglio sauce:

For this recipe we can use any kind of blue fish (i.e. codfish)

Ingredients: Fish, ORGANIC extra virgin olive oil " IL CASALE DELL' ULIVO", garlic, parsley, lemon and salt.

Scale, eviscerate, wash and dry the fish. Lay it on an oven pan, sprinkle it with two spoons of ORGANIC extra virgin olive oil " IL CASALE DELL'ULIVO", salt it, add pepper, and let it cook in a preheated oven at 180 degrees Celsius, for about 20 min. The sauce: pour the olive oil left in a pot, combine it with two spoon of hot water, whip it with a whisk. Pour the lemon juice, some chopped parsley, salt and pepper. The sauce must be very emulsified. Serve the fish in a platter, with the sauce on the side.
